Looking for an easy dessert to make for Easter Sunday? Try this super easy and fast recipe for lemon squares! You only need three ingredients and 30 minutes.

I adapted this recipe from one I found on Pinterest. All you need is a box of Angel Food cake mix, a can of lemon pie filling, and one stick of melted butter. You whisk the butter into the pie filling and then fold in the cake mix. After baking for 30 minutes, you have delicious, moist lemon squares. They're almost like lemon brownies. I love 'em. This is easily becoming my go-to dessert. Try them this Easter!

Meg's 1-2-3 Lemon Squares

Ingredients

  • One Box of Angel Food Cake Mix (I use Duncan Hines)
  • One Can of Lemon Pie Filling
  • One Stick of Melted Unsalted Sweet Cream Butter

Directions

  1. Preheat oven to 350 degrees.
  2. Grease a 9x13 glass baking pan.
  3. In a large bowl, whisk the lemon pie filling and butter together until the butter is fully incorporated and the mixture is smooth.
  4. Slowly fold the cake mix into the lemon filling mixture. Take your time folding to ensure all cake mix is blended into the filling.
  5. Pour the lemon batter into the baking dish. Use a spatula to smooth the batter evenly into the dish.
  6. Bake for 30 minutes or until the edges are light brown.
  7. Remove from oven and allow to cool for 30 minutes.

I sometimes add a teaspoon of vanilla extract to give the squares a richer flavor. You can top them with powdered sugar or for a more decadent treat, add half a teaspoon of lemon extract to a can of cream cheese frosting and then smooth over the squares before cutting.
