This Stupid Easy Crock Pot Recipe Will Change Your Life
The dinner I made last night was so good it made me question the relative goodness of all the dinners that proceeded it. It was so good my husband uploaded a photo of it to Facebook. He had seconds. My TODDLER had seconds. I felt like Martha Stewart minus the stint in the clink.The best part? It took about five minutes to make! Want to know how I pulled it off?
My coworker Kimberly found the recipe for Mississippi Pot Roast and made it last weekend. I'd seen the recipe pinned like a bajillion times, but when I checked the ingredient list... I bailed. I thought there was NO WAY a pot roast with such weird but simple flavors would turn out so, so dang awesome. (Obvs: I was wonderfully wrong.)
Want to make a Mississippi Pot Roast? You'll need a Crock Pot and about a 3 pound roast. I used a beef rump roast because it's an excellent cut for this application, and the third grader in me still snickers every time I say it: Rump Roast (heehee). Put the roast in your crock pot and add the ingredients that follow.
One Packet of Hidden Valley Ranch Dressing Mix (You can use another brand, but don't because Hidden Valley is the OG King of Ranch)
One Packet of Brown Gravy Mix (You could also use Au Jus mix, but Winn Dixie was out so I rolled with it and it worked)
Pepperocini Peppers (They are an odd ingredient but apparently essential to this roast's flavor. You can add like 5 or six. I added 10 and the roast wasn't spicy at all.)
One Stick of Butter (Look, this is a Cheat Day recipe, so I went all out. Please note that you need to use REAL BUTTER and not margarine here.)
That's it. You sprinkle the mixes on the dry roast. Drop in the peppers. Place the stick of butter on the roast, put on the lid. Cook your roast on the low setting and about 8 hours later you have a dinner so delicious you'll swear you died and went to home-cooked heaven.
I cooked mine for eight hours, and then I removed the peppers. I shredded the roast and kind of folded it into the gravy and cooked it for another hour. It was the best pot roast I have ever eaten.
I'm sorry, Momma. But... this Mississippi Pot Roast is hands-down the best pot roast of all time. Like, I am drooling thinking about leftovers right now. I was going to make a pot roast sandwich when I got home, but I may just open the Tupperware and stuff my face right by the fridge.
It's THAT good.
